Abstract:
This study based on a survey of 170 head chefs provides the first comprehensive empirical data on the profile of head chefs in the Republic of Ireland. Eighty-four percent of head chefs were male and the majority (48.8%) were in their thirties. There is an increased rise in the attainment of degrees (currently at 35%), but findings showed that it takes years to advance in the industry, where there is a high rate of turnover. This article both reviews and adds to the international literature on the occupation of chef and raises questions for further research such as: Why are there so few female head chefs in Ireland? What is the best way to manage talent and improve retention of head chefs? Why are there more migrant head chefs working in restaurants rather than hotels? Findings from this may benefit industry stakeholders, employers, educators, and prospective culinary students.

Abstract:
Despite consistent efforts to counteract those attitudes and practices that give rise to it, most putatively modern Western nations continue to experience the concrete effects of racial discrimination. This essay argues that nationality is all too easily conflated with ‘race’ or ethnicity, such that a seeming essence or givenness is manifested amongst all those within a particular geographic boundary. It is suggested that on the contrary, there is nothing natural about nationality as commonly understood; this being so, it must be continually shored up and reconstituted through social, linguistic and material practices. For modern nations in the West, this has often entailed the marking or identification - racialisation - of non-nationals and non-white ‘Others’. A logic of inside/outside subtends the concept of nation wherein such Others are the ‘constitutive outside’ that invisibly clarifies and reinforces the status of those within. Abstract:
This article examines the role of the guardian ad litem service in Ireland within the context of public law proceedings. In the first part, the role of the guardian ad litem in Irish courts is outlined and this is followed by a discussion of the broader legal context informing the right of children to be heard in Irish courts. The article discusses some of the concerns about the lack of statutory regulation, standards and structure in the Irish guardian ad litem system. The tension inherent in expressing the wishes and views of children while making recommendations regarding their welfare and best interests is also considered. The article concludes with the view that giving children a statutory right to be heard which is not supported with adequate resources and proper frameworks is of limited value.

Abstract:
This volume of essays which originated in the inaugural Dublin Gastronomy Symposium held in the Dublin Institute of Technology in June 2012, offers fascinating insights into the significant role played by gastronomy in Irish literature and culture. The book opens with an exploration of food in literature, covering figures as varied as Maria Edgeworth, James Joyce, Charles Dickens, Enid Blyton, John McGahern, and Sebastian Barry. Other chapters examine culinary practices among the Dublin working classes in the 1950's, offering a stark contrast to the haute cuisine served in the iconic Jammet's Restaurant; new trends among Ireland's 'foodie' generation; and the economic and tourism possibilities created by the development of a gastronomic nationalism. The volume concludes by looking at the sacramental aspects of the production and consumption of Guinness and examining the place where it is most often consumed: the Irish pub.

Children’s’ Outdoor play nowadays is the preferred approach to playing indoors which has become a constant focus of influences and powers of technology. Children spend hours on social media sites, isolated playing video games and lost in technologically powered screens (Larson et al, 2011). As a results of this disengagement with outdoors activities, children fall victims to many problems including obesity, social exclusion, and in some cases behavioural issues Fresh air and exercise are probably the two most common benefits associated with outdoor play by parents. However, many other advantages and beneficial of outdoor play including child’s social, cognitive and emotional development (Sluss, 2014).

Abstract:
Celtic Britain, especially Wales, is unusually well-served by the extent to which landscape monuments of medieval and modern religion have been catalogued and recorded. Significant recorded data-sets for pilgrimage include early and medieval inscribed stones, holy wells, and saints’ dedications. Influential geographical studies have created both explicit and implicit routes of connection between many of these. These data-sets and narratives have played, and continue to play, substantial roles in development of interpretations and routes created for religious tourism. This presentation, reflecting on a number of case-studies of trails and sites, will (mostly) resist the historian’s instinctive interest in deconstruction on points of authenticity, though we will see that there is room for reflection on resource-gathering and whether interpretation projects consistently accesses a critical knowledge base. Abstract:
In this chapter, we explore the untold stories of Spanish and Irish necessity entrepreneurs to better understand the process of becoming an entrepreneur. Working with narratives, media articles, and policy documents, we illustrate how necessity entrepreneurs do not recognize themselves in the institutionalized entrepreneur narrative as empowered, creative and independent individuals. It is necessity, not opportunity that is pushing, not pulling, them to become entrepreneurial. The process is experienced as more fragmented than official narratives outline. In exposing these untold stories, the chapter expands our understanding of entrepreneurship, presenting a more nuanced view of both entrepreneurs and the entrepreneurial process.
