Abstract:
This volume of essays which originated in the inaugural Dublin Gastronomy Symposium held in the Dublin Institute of Technology in June 2012, offers fascinating insights into the significant role played by gastronomy in Irish literature and culture. The book opens with an exploration of food in literature, covering figures as varied as Maria Edgeworth, James Joyce, Charles Dickens, Enid Blyton, John McGahern, and Sebastian Barry. Other chapters examine culinary practices among the Dublin working classes in the 1950's, offering a stark contrast to the haute cuisine served in the iconic Jammet's Restaurant; new trends among Ireland's 'foodie' generation; and the economic and tourism possibilities created by the development of a gastronomic nationalism. The volume concludes by looking at the sacramental aspects of the production and consumption of Guinness and examining the place where it is most often consumed: the Irish pub.

Hello! I'm Katie, and I've been living in Belgium for about ten years. Belgian food is delicious, but sometimes you just need something that reminds you of home. Finding this can pose a problem in Belgium, so I often make this from scratch. I don't grow our own or milk cows or anything like that, but I do cook with food that my grandmother would recognise. I also love Asian and Indian food and I often make this too (it’s the only way to guarantee you get the spiciness you need!). I try to cook low-fat, although some things I just refuse to meddle with (such as sticky toffee pudding).

Hi I’m Donna! A Thirty-something female, working 9-5 and dreaming of food all day long. I particularly love Italian food, chocolate, cheese and curry – in no particular order. I am one of those people who actually enjoys looking at your lunch/dinner pics on Twitter. As the name suggests, I have far too many cookbooks and the collection just keeps on growing (honestly – you should see my wishlist on Book Depository!). I read them like novels and the more photos the better. My notes and downloaded recipes are recorded on scraps of paper scattered all over my kitchen, so this blog is my way of organising them. There is nothing difficult or particularly authentic about these recipes, simply my interpretation of other peoples recipes and some made up myself.

Abstract:
Inorganic arsenic (iAs) in 13 store-bought edible seaweed samples and 34 dried kelp (Laminaria digitata) samples was determined by a newly developed, field-deployable method (FDM) with the aid of a field test kit for arsenic in water. Results from the FDM were compared to results from speciation analysis achieved by using high performance liquid chromatography coupled to inductively coupled plasma mass spectrometry (HPLC-ICP-MS). The FDM consisted of a simple extraction method using diluted HNO3 to quantitatively extract iAs without decomposing the organoarsenicals to iAs followed by the selective volatilisation of iAs as arsine (AsH3) and subsequent chemo-trapping on a filter paper soaked in mercury bromide (HgBr2) solution. Method optimization with a sub-set of samples showed 80-94% iAs recovery with the FDM with no matrix effect from organo-arsenic species in the form of dimethylarsinic acid (DMA) on the iAs concentration. I was given the Ottolenghi cookbook as a Christmas gift and I have to say I was enraptured from the minute I opened the cover. The focus is on using simple and healthy ingredients and mixing them to create great flavours. These meatballs are fab and Ive basically reduced the levels of oil used to make them slightly healthier. I hope you enjoy them as much as me!

This is a blog about all things food. From sharing my own kitchen creations and recipes, to pondering the inspiration I get from others. But mainly it is about the journey I have recently embarked upon, in establishing my own food business. When I was really young, about two or three years old, my dad used to ask me what I wanted to be when I grew up. Because my name is Elaine, my reply – which he had taught me to say – was ‘a road’. Cheesey eh? But I think it’s a good analogy for where I’m (hopefully) going :)

Abstract:
There is increasing demand for information on predator-prey interactions in the ocean as a result of legislative commitments aimed at achieving sustainable exploitation. However, comprehensive data sets are lacking for many fish species and this has hampered development of multispecies fisheries models and the formulation of effective food-web indicators. This work describes a new compilation of stomach content data for five pelagic fish species (herring, blue whiting, mackerel, albacore and bluefin tuna) sampled across the northeast Atlantic and submitted to the PANGAEA open-access data portal (www.pangaea.de). We provide detailed descriptions of sample origin and of the corresponding database structures. We describe the main results in terms of diet composition and predator-prey relationships. Welcome to my blog where I attempt to document my experiences with food while trying out recipes old and new. I grew up surrounded by good food and the smells and tastes of my mother’s kitchen in our South Indian home. So, whipping up an Indian dinner comes easily. Living in Ireland for almost 5 years exposed me to an array of cuisines and foods which were otherwise foreign and unknown and kickstarted an exciting phase in my life. I set up this blog as a way of capturing some memorable kitchen and food experiences and try to keep it updated as often as I can. I should not forget to mention my lovely husband, Peter, who’s very supportive of my efforts no matter what new hobby or project I choose to dabble in. Abstract:
Soft condensed matter (SCM) physics has recently gained importance for a large class of engineering materials. The treatment of food materials from a soft matter perspective, however, is only at the surface and is gaining importance for understanding the complex phenomena and structure of foods. In this work, we present a theoretical treatment of navy beans from a SCM perspective to describe the hydration kinetics. We solve the transport equations within a porous matrix and employ the Flory–Huggin’s equation for polymer–solvent mixture to balance the osmotic pressure. The swelling of the legume seed is modelled as a moving boundary with an explicit transient equation. The model exhibits a good agreement with the experimental observations and is capable of explaining the stages of hydration. Sensitivity analysis indicated that the degree of hydration is dependent on the bean size and is also sensitive to the selection of the intrinsic permeability of the bean.

Simulated gastro-intestinal digestion is widely employed in many fields of food and nutritional sciences, as conducting human trials are often costly, resource intensive, and ethically disputable. As a consequence, in vitro alternatives that determine endpoints such as the bioaccessibility of nutrients and non-nutrients or the digestibility of macronutrients (e.g. lipids, proteins and carbohydrates) are used for screening and building new hypotheses. Various digestion models have been proposed, often impeding the possibility to compare results across research teams. For example, a large variety of enzymes from different sources such as of porcine, rabbit or human origin have been used, differing in their activity and characterization. Differences in pH, mineral type, ionic strength and digestion time, which alter enzyme activity and other phenomena, may also considerably alter results. Consumers have become increasingly concerned with the impact which the foods they eat have on their health. To address this issue, the food industry has developed a variety of foods that make health claims. Eating certain foods can, it is claimed, ‘reduce risks of health diseases’ or to ‘maintain a person’s health’. These foods are commonly known in the food industry as Functional Foods (FF). This study was conducted to examine consumers’ attitudes and buying behaviour in relation to FF and how can they be successfully marketed by the industry, with a special focus on regulations and labelling. Secondary research (literature review) examines the history, development, consumer acceptance and marketing of FF. Primary research explores FF buyer behaviour and attitudes towards these products. I cook because I love to eat; and I get great pleasure from seeing people enjoy the food I cook. I am thrilled when I encounter one of my recipes out there in the world and get to meet the person who has made it. (Melitzanosalata, a rocking Greek dip, seems to be the most popular party recipe - try it!) Even better are the emails from strangers halfway across the world that say, “Hey, I made one of your recipes, and you know what? It worked perfectly! I can cook!” although the ones that say “Hilarious post, you made me snort my tea,” also make my day! Blogging brings together three of my passions: cooking, writing and photography. It also brings me in contact with a huge community who adore food as much as I do and are an endless source of humour, inspiration and support.

When I moved to Ireland just over four years ago, I went through my fair share of culture shock. There were the big things – like struggling to understand what everyone was saying (to be fair, I was living in Drogheda!) – and a million little ones, like seeing grated cheese in a cold sandwich (so…odd) and realising that you can’t buy liquor on Good Friday. Life was quite different here than what I was used to in Los Angeles, my adopted hometown. I say “adopted” because I was actually born in Japan and lived there until I was five years old. With my mom’s entire family still living there, we go back to visit when we can, and a couple of weeks ago I went back again, this time bringing my Irish husband along for the first time.
