Abstract:
The DIT-ACHIEV Model for the Sustainable Management of Tourism has been developed by the School of Hospitality Management and Tourism, Dublin Institute of Technology and is endorsed by the Environmental Protection Agency and Fáilte Ireland. It explores six areas of investigation - Administration, Community, Heritage, Infrastructure, Enterprise and Visitor. The purpose of piloting this DIT- ACHIEV model in Killarney is to test its use with the objective to refine and adjust its methodology, so that it can be applied in any Irish tourism destination. Early indications are that The Model will provide the Irish tourism Industry with a valuable tool for making its product and management far more sustainable. <p>This research study examines the impact of film induced tourism and destination branding on locations featured in popular films and television series. It also investigates the characteristics of film induced tourism and determines if the key film and tourism stakeholders support the integration of film into Yorkshire’s (UK) tourism product. Yorkshire was selected as the case study area, as it has been the film location for many popular television series and is the subject of much location research within the tourism discipline. The need for a thorough investigation into the film induced tourism phenomenon was particularly evident from the literature review undertaken, as it showed that there was a significant research gap in the successful integration of this phenomenon and destination marketing. This survey profiles the domestic market for water-based tourism, sport and leisure in Ireland. The data provides up-to-date statistical information on 18 water-based leisure activities broadly grouped under the following categories: Seaside/Resort trips; Angling; Coastal and Inland Boating; and Watersports. The objective of the survey is to demonstrate the significant contribution of marine leisure activity to the national economy, and to highlight emerging trends and the potential for development of our water-based leisure resources. A key finding of the survey, conducted by the ESRI in 2003, is that marine leisure activity based on Ireland’s marine and freshwater resources generates €434 million in expenditure by Irish residents, and approximately 5,100 jobs are supported by this level of expenditure. <p>During the past ten years self-service technologies (SSTs) have attracted research attention especially in the banking, retail and airline sectors. The infusion of technology in the service encounter has been identified as being advantageous to both the service provider and the consumer. Service provider companies may reduce costs, increase consumer satisfaction and tap into new markets which have been made accessible via the Internet. From a consumer’s point of view, SSTs can save money and time, provide convenience, and in some cases, enjoyment. All the above mentioned advantages are achievable only if SSTs gain adoption among consumers. In light of the importance of consumer participation in SSTs, this paper reviews the state of the SST adoption literature in an attempt to identify the most important influencing factors. <p>Assessing the environmental quality of tourism and recreation areas is considered fundamental to the sustainable management of these resources. However, existing methodologies for such assessments rely on sets of environmental data that are often poorly linked and difficult to interpret and integrate in a holistic manner. Risk assessment is a concept that has developed to the point where it has the potential to address current limitations in environmental assessment methodologies. This thesis presents a new model for the application of risk assessment to the management and assessment of environmental sustainability in the tourism and recreation sector. This model was applied and tested at two contrasting tourism and recreation areas in Ireland and a detailed methodology was developed. Abstract:
The 2000?2005 period was a turbulent one for the tourism industry. Yet despite shocks like September 11 and the outbreak of Foot and Mouth disease, domestic tourism has not only survived but also apparently thrived, with a nominal growth in trips and expenditure of 31% and 65% respectively. This paper attempts to put this increase in domestic tourism into perspective and examine some of the driving forces behind the growth, such as population, immigration, employment, income and price. The paper also highlights structural changes occurring on the supply side, such as the decline of the B&B sector and the emergence of holiday homes as an important sector. It also demonstrates the magnetic pull of the Greater Dublin Area on business tourism and highlights the differing tourism patterns associated with different age groups or whether children are involved or not. While there is a general agreement that the tourism statistics are suboptimal due to inappropriate data collected, little research has been conducted into investigating new ways to gather more accurate data to describe tourist behaviour. <p>Food Tourism has been recognised as a fast growing niche area where Ireland can gain competitive advantage. In recognition of the importance of collaboration among diverse stakeholders in the development of food tourism, networks have been identified as essential. This article presents findings from research conducted with three networks and reveals the motivations for committee membership. Data was gathered in 2012 through participant observation and interviews with steering committee members on three food networks using an action research approach.</p> <p>A framework for examining motivations for collaboration is offered in this article which will contribute to effective network management. Motivations are aligned on a spectrum with individualistic motivations on one end and altruistic motivations on the other. <p>This study provides an interpretivist exploration of customer usage and experiences of self-service technologies (SSTs) in the tourism sector. Tourism customers are increasingly using a wide range of SSTs, for example, to make reservations online and use self-check-in and „bag and tag‟ facilities at airports. While SST research to date has provided insights into the factors affecting customer SST adoption decisions, the aim of this study is to explore customers‟ perspectives on their usage and experiences of SSTs in the tourism sector. This interpretivist study employs a two-stage qualitative methodology of short qualitative interviews with 133 participants at an international airport, followed by 32 in-depth interviews with SST users in the tourism sector. <p>This paper forms part of a larger Doctorial research study into internship and provides an overview of culinary life and of the many celebrated chefs who travelled to gain culinary experience before Erasmus funding was available for internship. I also use this paper to provide a synopsis of kitchen systems and present a review of studies related to internship. I attempt to provide some insight into internship and culinary practice in order to augment the forthcoming internship framework. The paper commences with a short review of Georges Auguste Escoffier, one of the most celebrated chefs of all time and one who is still used as a model for the teaching of young chefs today. Following this, I go on to discuss internship and examine some of the key writers on the subject. I compare and contrast these writers and provide reflective comments at the end of the review. The paper concludes with a sample of the research findings.</p>

The primary objective of this study was to investigate the Applicability of Customer Profitability Analysis as a strategic decision-making technique in a hospitality environment. The study commenced with a review of literature in the fields of Yield Management, Customer Profitability Analysis (CPA) and Activity-Based Costing (ABC), with ABC being identified as an appropriate method of costing to use in CPA. Issues arising from the implementation of an Activity-Based CPA including the purpose of the system, the selection of software and the identification of activities and drivers are considered both in the context of a literature review and are later considered in the context of the primary research undertaken by the author. <p>Arts festivals are in the ascendant. Framed within an array of neo-liberal, culture-led urban regeneration strategies, they are now a mainstay of urban tourism and urban policy-making. As such, they face growing competitive pressures and competing agendas, and the need for a set of coherent goals and policy frameworks is vital. While a review of the literature clearly shows that arts festivals can deliver a series of benefits that separately meet the cultural policy and urban tourism policy objectives, there is little to suggest that cities normatively engage in comprehensive, integrated policy-making for urban arts festivals.
